This sweet and spicy jalapeño coleslaw is a summertime family favorite! It goes with just about ANYTHING and is super simple with only 4 ingredients!! Celebrate with me because delicious food does NOT have to be hard! What are the keys?? 1) fresh herbs. 2) sauces: aka MAYO.
I absolutely HATED mayo growing up. Commercially produced mayonnaise has industrial oils like soybean and canola oil, which longterm use isn’t great… And in my opinion isn’t very good… And homemade mayo is delicious!! Totally worth making it at home! If you haven’t tried it before, you totally have to!
This jalapeño coleslaw is great on top of tacos and makes for an awesome side dish with Mexican food!Print
- 1 bag southern style coleslaw mix OR see note below
- 1 jalapeño, chopped
- 1/2 cup date mayo- make your own or buy paleo mayo (date mayo: batch of mayo + 1/2 c pitted dates)
- 1 bunch cilantro, chopped
- Note: If you don’t have bagged “coleslaw mix,” slice a head of white cabbage in thin strips and julienne carrots to equal about 1 pound total.
- Mix together and serve!
