You can’t have sugar cookies without icing… This paloe icing is straight from heaven… The powdered coconut sugar gives it a rich caramel flavor, and we all know that chocolate and caramel go hand in hand. Whip up this icing, put it in a pastry bag, and decorate away! As you can tell, it was easy to decorate even intricate things like words! And it goes perfectly with my Paleo Sugar Cookies Recipe! - 1 cup powdered coconut sugar
- 7 t full-fat canned coconut milk
- 1/4 t salt
- 1/2 t vanilla
- First, powder the coconut sugar. (see this post)
- Add the coconut milk, vanilla, and salt, and beat until smooth and glossy. If it is still too thick, add more coconut milk until the texture has reached your desired consistency.
