Don’t have an InstantPot? You can do the same with a pot on the stove and cook until meat is cooked through and veggies are done!

Whole30 Beef Stew Recipe

Beef Stew

Ingredients

Scale
  • 2 lb beef stew meat
  • 1 16 oz bag of baby carrots or 6 whole carrots, chopped
  • 1 1.5 lb bag of baby bite-sized potatoes (or fingerling)
  • 1 onion, chopped (or tiny pearl onions)
  • 4 cups (1 box) beef broth (@barebonesbroth is my favorite!)
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 whole bay leaves
  • 2 t dried parsley
  • 34 garlic cloves, minced or pressed
  • 2 T balsamic vinegar
  • 1 teaspoon paprika
  • ½ t salt (or to taste)
  • ½ t pepper (or to taste)

Instructions

  • Chop the onion and throw it in the InstantPot.
  • Add all other ingredients and click “beef/ stew.”
