Curry Chicken Salad with Raisins Recipe (Paleo + Whole30)

4 chicken breasts, cooked and either shredded or cut into 1/2 in cubes

1 c Paleo mayonnaise (or make your own!)

1 T lime juice

2 T curry powder

10 dates, pitted

1/2 c cilantro, finely chopped

1/2 c sliced almonds

1/2 c golden raisins

1/2 c celery, chopped

1/2 c scallions, chopped


  1. Blend mayonnaise, lime juice, curry powder, and dates in a food processor or blender until smooth. (I use my Vitamix!)
  2. Add the mayonnaise mixture to a mixing bowl along with all other ingredients, and stir to combine. I personally love this served on a bed of lettuce or even in an avocado half. Enjoy!
