Don’t have an InstantPot? You can do the same with a pot on the stove and cook until meat is cooked through and veggies are done!

Ingredients
  

  • 2 lb beef stew meat
  • 1 16 oz bag of baby carrots or 6 whole carrots chopped
  • 1 1.5 lb bag of baby bite-sized potatoes or fingerling
  • 1 onion chopped (or tiny pearl onions)
  • 4 cups 1 box beef broth (@barebonesbroth is my favorite!)
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 whole bay leaves
  • 2 t dried parsley
  • 3-4 garlic cloves minced or pressed
  • 2 T balsamic vinegar
  • 1 teaspoon paprika
  • ½ t salt or to taste
  • ½ t pepper or to taste

Method
 

  1. Chop the onion and throw it in the InstantPot.
  2. Add all other ingredients and click “beef/ stew.”
  3. (seriously, it’s that easy!)
